Oatmeal Flax Breakfast Bars

Winter is in full swing here in Northern Minnesota and nothing brings comfort to these long cold days like some wholesome fruit breakfast bars.  Homemade with simple nourishing ingredients these are the perfect way to start the day or to enjoy as an afternoon snack.

I am always looking for ways to increase the nutrition of our favorite foods and these oat flax bars pack a powerful punch of fiber, vitamins and minerals in every bite.  

Why these bars are worth giving a try

Easy to assemble– takes just minutes to throw this together

Staple ingredients– foods that are easy to stock in pantry or freezer

Nutritious– Fiber, vitamin and mineral rich ingredients, no refined carbs 

Customizable– Easy to change filling with a variety of fruit combinations

Tasty– A tasty treat the whole family is sure to enjoy

Wholesome Ingredients:

Flaxseed– Rich in omega 3 fatty acids, fiber and lignans

Oats– Contain large amounts of beta-glucan (a type of soluble fiber), vitamins, minerals and antioxidants

Freshly milled einkorn flour- ancient grain that is rich in protein, minerals, vitamins, and antioxidants. 

Chia Seeds– Omega 3s, high fiber, packed with powerful antioxidants and minerals

Coconut Sugar– Contains trace amounts of vitamins and minerals, less glycemic impact, contains inulin fiber

Baking Powder- Low calories, essential minerals such as calcium, iron, potassium and sodium

Real Salt– An all- natural unrefined sea salt rich in essential minerals

Butter (or coconut oil)- Healthy fat rich in fat-soluble vitamins A, D, E and K

Berries– Rich in fiber, vitamins and minerals

Lemon– Vitamin C and antioxidant rich

Raw Honey-Unrefined sweetener filled with vitamins and minerals

Berry Chia Jam

Ingredients

  • 3 cups frozen berries of choice
  • 1-2 tbsp raw honey Start out with one to taste test
  • 1 tbsp lemon juicw
  • 3 tbsp chia seeds

Instructions

  • Place 2 cups frozen berries in sauce pan. Slow simmer 10 Minutes
  • Strain extra juice out and put in blender for 30 seconds
  • Place pureed fruit in a medium sized mason jar
  • Add in raw honey + lemon juice + chia seeds
  • Put in the fridge for a few hours to chill and for the chia seeds to gel

Oatmeal Flax Breakfast Bars

Ingredients

Crumble

  • 1/4 cup pure maple syrup sugar
  • 1 cup freshly milled flour
  • 1/4 cup ground flax seed
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1 cup gluten free rolled oats
  • 1/4 cup butter coconut oil works as well

Filling

  • 3/4 cup Berry Chia Jam + 1 cup mixed frozen berries

Instructions

  • Spray pan with oil
  • Make the crumble by mixing dry ingredients and then cutting in the butter with a pastry cutter.
  • On an oiled pan put 3/4 of the crumble mixture into the bottom of an 8 * 8 square pan
  • Put the berry chia jam filling over the crumble bottom
  • Put the rest of the crumble mixture on top and bake it at 350 for 40 minutes.
