I am always looking for ways to increase the nutrition of our favorite foods and these oat flax bars pack a powerful punch of fiber, vitamins and minerals in every bite.

Berry Chia Jam
Ingredients
- 3 cups frozen berries of choice
- 1-2 tbsp raw honey Start out with one to taste test
- 1 tbsp lemon juicw
- 3 tbsp chia seeds
Instructions
- Place 2 cups frozen berries in sauce pan. Slow simmer 10 Minutes
- Strain extra juice out and put in blender for 30 seconds
- Place pureed fruit in a medium sized mason jar
- Add in raw honey + lemon juice + chia seeds
- Put in the fridge for a few hours to chill and for the chia seeds to gel
Oatmeal Flax Breakfast Bars
Ingredients
Crumble
- 1/4 cup pure maple syrup sugar
- 1 cup freshly milled flour
- 1/4 cup ground flax seed
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1 cup gluten free rolled oats
- 1/4 cup butter coconut oil works as well
Filling
- 3/4 cup Berry Chia Jam + 1 cup mixed frozen berries
Instructions
- Spray pan with oil
- Make the crumble by mixing dry ingredients and then cutting in the butter with a pastry cutter.
- On an oiled pan put 3/4 of the crumble mixture into the bottom of an 8 * 8 square pan
- Put the berry chia jam filling over the crumble bottom
- Put the rest of the crumble mixture on top and bake it at 350 for 40 minutes.
